Ingredients

For the Strawberry Liquid

  • 1 ¾ cups quartered strawberries, fresh or frozen
  • ¾ cup granulated sugar

For the Cookies

  • 2 cups flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup butter
  • 1 ¼ cups plus 2 tablespoons granulated sugar 
  • 1 teaspoon pure vanilla extract
  • ¼ cup milk
  • 3.5 tablespoons strawberry liquid
  • ¼ teaspoon red food colouring

Method

  • In a saucepan set over medium heat, cook out the sugar and strawberries for about 10 minutes until they form a thick syrup then strain it through a fine sieve to remove the lumps.
  • To make the cookies, whisk together the flour, baking powder and salt.
  • In an electric mixer beat the butter and sugar together until aerated and creamy. 
  • Slowly add your strawberry syrup and vanilla until combined.
  • Then start adding in the flour mixture and if desired, add some red food colouring too.
  • Chill the dough for 1-2 hours. 
  • Preheat an oven to 180 C and then scoop your dough onto a lined baking sheet.
  • Bake for 15 minutes, let them cool and then decorate with icing.
