For Hindus, Ekadashi, also known as Ekadasi, is a lucky day. It occurs twice a year in the Hindu calendar, on the eleventh day of the dark and bright lunar phases. As a result, there are roughly 24 Ekadashi in a year, and each has a unique meaning.
For instance, some of the well-known Ekadashi are Vaikuntha, Nirjala, and Vijaya. The most significant Ekadasi in the state of Maharashtra is Ashadi Ekadashi.
Food consumed during a fast should be light and simple to digest so that you can easily dedicate your mind to spiritual activities such as mantra chanting, practising meditation, or engaging in your spiritual sadhana, without it pulling you down energetically.
When you consume large, difficult-to-digest meals, your body expends all of its energy doing so, which also puts you to sleep. Therefore, it is recommended to eat light, easily digestible food when fasting.
Rice, whole wheat flour, pulses, cereal grains, onions, garlic, and other foods are not consumed on fasting days. You can have fruits, sabudana, makhana, milk, and flours such as rajgira ka atta, singhare ka atta, and kuttu ka atta. You can also use rock salt, or sendha namak, in place of ordinary salt on fasting days. On this day, strictly refrain from eating rice.

1. Sabudana Khichdi
It is one of the most well-liked dishes that people consume during fasting. You can make sabudana khichdi with boiled potatoes, roasted peanuts, sabudana pearls, and a few spices.
Sabudana khichdi is a simple snack that is easy and simple to prepare on days when people fast, such as Ekadasi or Navratri. You can also make sabudana pakora and tikki with sabudana pearls.
2. Rajgira Paratha

6. Singhare Ki Poori
A tasty variation of pooris made with mashed potatoes, water chestnut flour, edible rock salt, and a few other spices. These pooris taste just as delicious as regular pooris prepared from whole wheat flour, so it doesn't really matter if you detect a faint singhara or water chestnut flavour in them.
7. Vrat Ka Chawal Ka Pulao
Samvat pulao is a quick and easy pulao to make. This Ekadashi rice pulao is prepared during fasting. Sama rice is a healthy choice for fasting days and a great gluten-free grain as well. You can have them with or without Vrat ki kadhi.
