Upvas Kachori: A Satvik Snack That Has Our Heart

Satvik eating may seem like an overwhelming affair, but if you are willing to put a little thought into it, you are in for a ride. Sure, everyday staples like salt, lentils, rice are off bounds, but there are so many other, nutritious ingredients to load up on as well. 

The recipe shared here is ‘Upvas Kachori’, a kachori whose outer layer is made of mashed potatoes and the inner layer is filled with the goodness of coconut and nuts. The potatoes give a crispy outer layer and the nuts help the devotees keep full for the entire day during their fast. 

The stuffing is made of coconut, coriander leaves, roasted peanut powder with an additional tadka of raisins and chopped cashews roasted in ghee. The stuffing is rich in nutrients which provide energy to people during their vrat and also have many health benefits. The kachoris taste delicious and have savoury and sweet flavours. The dish is very rich and purely made with a limited amount of spice along with sendha namak and sugar. 

Ingredients:

Filling-

  • 1 cup grated Coconut
  • 1/4 cup Coriander leaves
  • 1 tsp green Chilli crushed
  • 10 nos Cashew chopped
  • 10 nos Raisins chopped
  • 1 tbsp Sugar
  • 1 tsp Salt (Sendha)
  • 1 tbsp Lemon juice
  • 3 tbsp roasted Peanuts crushed
  • 1 tbsp Sesame seeds
  • 1 tbsp Poppy seeds
  • 1/2 tsp Cumin seeds 

Outer covering

  • 1 cup Potato boiled and grated
  • 2 tbsp Arrowroot /corn flour
  • 1 tsp Sendha Salt
  • 2 tbsp Arrowroot /corn flour for rolling
  • Oil for deep frying

Method: 

For Filling:

  • In a bowl add coconut, coriander leaves, sugar, peanuts, lemon juice, and salt
  • Heat ghee in a vessel, add cumin seeds, green chillies, raisins, poppy seeds, sesame seeds, cashew nuts and give it a mix
  • Allow it to cook for a few minutes till it leaves a nutty aroma
  • Add the fried mixture into the bowl, give it a good mix

For Coating:

  • In a bowl, mash the boiled potatoes and make it into a dough-like shape
  • Add salt, arrowroot powder to the dough
  • Give it a good mix, take a portion of it and with the help of arrowroot make a bowl of the potato
  • Add a spoon full of the filling and encase it like so
  • Dust it with arrowroot powder and bind it into a potato ball
  • Heat oil in a vessel, fry the potato balls on high flame
  • Our Kachori is fried and ready
