Chef-Curated Summer Dessert Recipes To Make With Dry Fruits

No Indian dessert is complete without the addition of dry fruits. While you might enjoy the rich servings of warm halwa and piping hot gulab jamuns, the summer season calls for chilled desserts. However, the loo and the harsh heat make it impossible to step outside for a bite. 

If you’re in the same boat, the best way to enjoy something sweet is by making it at home. And the best part is, with these chef-special recipes, you don’t have to be a professional to whip up desserts. Curated by chefs Rakhee Vaswani and Meghna Kamdar from American Pistachio Growers, here are some chilled dessert recipes that you can make right in your kitchen with minimal ingredients and effort.

Pistachio Kulfi

Ingredients:

  • Pistachio paste - 2 tbsp
  • Full-fat milk - 500ml
  • Readymade khoya - 60 gms
  • Fresh cream - 3 tbsp
  • Condensed milk - 100 gms

Instructions:

  1. Heat the milk and fresh cream cook till it simmers.
  2. Add khoya, condensed milk. Continue cooking till a nice thick consistency is achieved.
  3. Add pista paste to the mixture and stir it well.
  4. Set for a couple of hours in desired moulds like paper cups, and add a stick.
  5. Freeze it, then remove and enjoy.

Pista And Mango Sabudana Kheer

Ingredients:

  • Milk - 1 litre
  • Cardamom Powder - 4-5 pinches
  • Sabudana - ½ cup (soaked for 4–5 hours)
  • Pistachios - ½ cup
  • Mangoes - 2, chopped

Instructions:

  1. Take 1 litre of milk and bring it to a boil.
  2. Add cardamom powder and stir well.
  3. Once the milk comes to the boil, add soaked sabudana (soaked for 4-5 hours).
  4. Let sabudana cook in milk till it becomes transparent.
  5. Lower the heat and add condensed milk as per your taste. Stir everything well.
  6. And add 1/4 cup blanched pistachios (take pistachios, keep in warm water for 20-30 minutes; then gently remove the skin).
  7. Once the kheer comes to the right consistency, turn off the heat and bring it to room temperature.
  8. Then, add 2 chopped mangoes; you may add mango pulp as well.
  9. Keep the kheer in the fridge to chill.
  10. Enjoy this kheer chilled with some more pistachios and mango garnishing.
