Roast chicken is just isn’t our favourite but Lisa Haydon’s favourite too. Model and Actress Lisa Haydon often shares her food diaries on Instagram and we absolutely love it. Recently, the model treated fans with a glimpse of her dinner meal and we are excited!

It is not the first time that Lisa has shared such amazing and delectable stuff on her Instagram account. In her previous post, she shared her go-to breakfast recipe and called it a blast from the past. While preparing a toasted English muffin for her husband, the model recalls all the instances that made the dish her go-to breakfast. The actor reveals that an English muffin toasted with ricotta, berries, and honey has been her go-to breakfast since the time she was working jobs in Europe. And now, she has shared the roast chicken and crushed potatoes recipe that we just can’t wait to try. The actress shared a post and captioned “This page is turning into a food diary. Here’s dinner 🌝. Roast chicken   and crushed potatoes”. I think she is true about the food diary, isn’t it?

Ingredients 

  • Whole chicken cut into legs and breast with bones on
  • One bundle of rosemary chopped
  • One bundle of thyme
  • Eight cloves of garlic
  • Salt & pepper to taste
  • 1/4 cup olive oil  
  • 1 kg potato (boiled just till a fork can go through). Make sure you don’t over boil
  • One bundle chopped parsley
  • One lemon

Method 

  • Start by crushing rosemary, thyme, and garlic cloves. Add extra virgin oil. 
  • Add salt and pepper as per taste. 
  • Rub it all over the chicken. 
  • Chop parsley 
  • Take boiled potatoes and crush the on a baking tray (properly oiled) 
  • Sprinkle salt, pepper, and parsley on the crushed potatoes. 
  • Also, drizzle the potatoes with olive oil. 
  • Place the chicken on the top. Also, wedge lemon pieces inside the chicken. 
  • Bake the chicken for 40 to 45 minutes at 230 degrees Celsius. 
  • Watch it sizzle and eat!!
