  • 1 tablespoon sugar
  • 1/2 teaspoon baking powder

  • In a large mixing bowl, combine the buckwheat flour, all-purpose flour, sugar, baking powder, baking soda, and salt. Mix well to ensure all the dry ingredients are evenly incorporated.
  • In a separate bowl, whisk together the buttermilk, water, and egg until smooth.
  • Gradually pour the wet ingredients into the dry ingredients, stirring gently to form a smooth batter. Be careful not to overmix; a few lumps are fine.
  • Let the batter rest for about 10-15 minutes. This allows the flours to hydrate and the flavors to meld together.
  • Heat a non-stick pan or griddle over medium heat. Add a small amount of butter or oil to coat the surface.
  • Ladle about 1/4 cup of batter onto the pan for each pancake. Spread it slightly to form a round shape.
  • Cook the pancake until bubbles start to form on the surface, then flip it gently with a spatula. Cook for another minute or two until both sides are golden brown.
  • Transfer the cooked pancake to a plate and keep it warm. Repeat the process with the remaining batter, adding more butter or oil to the pan as needed.

Serve your delicious Khura pancakes warm, stacked high, and with your favourite toppings. Maple syrup, honey, fresh fruits, or even a dollop of yogurt are all wonderful choices to complement the unique flavours.

Enjoy the taste of Arunachal Pradesh's culinary heritage with your homemade Khura pancakes. Share them with your loved ones and savor the delectable goodness of this regional delight. Happy cooking and bon appétit!
