  • 2 cups rice - washed and soaked
  • 2 Tbsp Mint - chopped
  • 2 Tbsp Coriander - chopped
  • 1/4 cup Ghee
  • 1/4 tsp Cinnamon-broken
  • 4 Cloves
  • 2 green Cardamoms
  • 1/2 cup Onions-grated
  • 2 tsp Ginger-garlic
  • 5 Tomatoes, puree
  • 4 Green Chillies-slit
  • 2 tsp Salt or to taste
  • Coriander Leaves for garnish

Instructions to make Tomato Rice:

  1. Boil the tomatoes then purée them in a blender
  2. Heat ghee or oil in a pan
  3. Add the cinnamon, cloves, and cardamoms to the ghee 
  4. Add the onions & ginger garlic paste then sauté until the onions are light brown
  5. Add tomato puree and continue cooking until the fat separates
  6. Add salt and stir the mixture a few times after adding the green chilies
  7. Now, add rice, coriander and mint
  8. Give it a good stir so all the ingredients combine well
  9. Then, add 3 cups of water and bring it to boil
  10. When the water is boiled then simmer the heat and cook till the rice is cooked
  11. Serve hot with coriander as a garnish
