What is needed: 

  1. 1 cup white sugar
  2. 1/2 cup butter (no salt)   
  3. 1/2 cup heavy cream 
  4. 1/2 teaspoon vanilla 
  5. Pinch of salt 

Method: 

  1. First, melt the sugar in a pan over medium heat. Stir slowly with a wooden spoon until it turns brown. This takes some time, so be patient!  
  2. Once the sugar is a nice amber colour, stir in the butter until melted.  
  3. Now slowly pour in the heavy cream while stirring. It may bubble up - that's ok! Keep stirring until it's smooth. 
  4. Take the pan off the heat. Stir in the vanilla and salt.  
  5. Let the toffee syrup cool for a few minutes before putting it in a jar.
