This Gajar Paratha Is Perfect For A Wholesome Winter Breakfast

It’s that time of the year again, when the chill in the air is making us want to sit cosy in our blankets and just indulge in all things delicious. After all, there’s a reason we love to nosh on delicacies such as Gajar Ka Halwa, Til Ke Laddoo, Gajak and many such winter delicacies during this season. Winter brings with it a host of delicious seasonal vegetables as well for us to enjoy. Be it palak, methi, radish or broccoli, these tasty veggies not only offer different textures and flavours, but also come loaded with innumerable health benefits. 

Any conversation about winter vegetables is never complete without mentioning the popular carrot (gajar). Be the red or orange carrot, dishes made with this veggie are loved by kids and adults alike, more particularly the exceptionally decadent Gajar Ka Halwa. But beyond the halwas and kheers, the versatile carrot can be used to make many other wholesome dishes too. Wondering how? Here, we bring you the recipe for the delicious Gajar Paratha, which is ideal for a stellar winter morning meal. 

Parathas are one of the most loved breakfast options, especially in North India. Not only are they super easy to make, but can also be stuffed in many different ways. If you are a fan of parathas, it is time you move on from the regular aloo or paneer paratha. Rich in antioxidants, Vitamin A and Vitamin C, gajar makes for a healthy addition to your regular parathas.  

This Gajar Paratha is made using a dough of grated carrots mixed with whole wheat flour and flavoured with cumin seed powder, ginger, green chillies, red chilli powder, and coriander leaves, along with salt to taste. Add water in small portions to knead a soft dough, which is then made into small balls, rolled into parathas, and cooked until they turn crispy on a tawa over medium flame. You can top it with a dollop of butter and serve with curd and pickle.
