This 15 Minute Meal Bowl Is Your Template For Healthier Eating

Even the most diehard chefs have days when they just don’t feel like cooking. But lack of time doesn’t have to be an issue when you have this simple recipe on hand. Inspired by sushi and poke bowls, this simple Healthy Prawn Bowl inspired by the Modern Nonna combines fresh ingredients with punchy flavours for a meal that’s filling and delicious, and best of all, it can be done in 15 minutes. 

Though this recipe calls for prawns, they can be substituted with any other protein such as chicken, paneer or even chickpeas. The key is to ensure that every bite is nutritionally balanced. It’s also very easy to replicate since you can use whatever veggies you have in the fridge at the moment, a perfect way to get rid of extras you’ve been trying to use up.

Ingredients

  • 50 gms cleaned prawns 
  • 50 gms cooked rice
  • 1 cucumber
  • 1 carrot
  • 1 spring onion
  • Sriracha
  • Mayonnaise
  • Sriracha 
  • Paprika
  • Garlic powder
  • Sesame seeds

Method

  • Start by cooking your rice as per the instructions and set it aside for later.
  • Peel, devein and clean your prawns and if they’re large, cut them into bite sized pieces.
  • Season the prawns with salt, pepper, garlic powder, smoked paprika and a teaspoon of oil.
  • Let it sit while a pan heats up and then saute the prawns for 2-3 minutes under they’re opaque.
  • Make some spicy mayo by mixing equal parts mayonnaise and sriracha.
  • Cut your veggies into thin strips and lay them on top of the rice. 
  • Add the prawns and garnish with a drizzle of spicy mayo, sesame seeds and spring onions.
