To prepare this dish, you can choose either Sooji or Rava. It is semolina either way; the name changes based on whether you are in North or South India. But Sooji might turn the texture a little mushy. This is because Rava is a coarser variant of semolina and is a preferable choice.

In fact, South India has a host of breakfast options using Rava as the main ingredient. After all, it has many health benefits: it promotes weight loss, improves heart health, supports the nervous system, etc. Let’s now cook up this traditional South Indian dish in a quick and easy way by following the below instructions.

  • 1 cup of Rava/Sooji
  • 1/3 cup of Green Gram Dal
  • 4 cups of water
  • 5-6 cashews
  • 1 tablespoon of cumin seeds
  • 1 teaspoon of pepper
  • Ghee
  • Ginger

Method

  • Take a cup of Rava and lightly roast it in a pan. Roasting the Rava helps improve the texture.
  • Take 1/3 cup of Green Gram Dal and add it to the Rava.
  • Add two cups of water to blend the mixture. Try to stick to this measurement, as the batter becomes perfect only when you add enough water.
  • Microwave this mixture for 15 minutes while stirring it every 3 minutes. The microwave has to be at a high temperature.
  • Add the roasted Rava and the rest of the water to the mixture. Now, microwave it for another 3 to 4 minutes.
  • Take the cashew nuts, cumin seeds, pepper, and ginger and add them to the mix. These will help build the base for the flavours of your dish. The cashew will give it a nutty flavour, the cumin will add some savouriness, the pepper will spice up the dish, and the ginger will give it flavour.
  • Microwave this mixture for another minute with some ghee added to the top.
  • After bringing it out of the microwave, add around another three or four tablespoons of ghee for a rich taste. A generous amount of ghee helps thicken the batter and maintain a good consistency.
  • A south Indian dish is incomplete without curry leaves. Adding it to the dish will completely transform its taste.
  • Reheat it for another minute before serving.
  • Add salt for taste. Voila! Your Rava Pongal is ready to serve.

Tips For Making Rava Pongal

Here are some tips for you to make Rava Pongal like a pro.

  • It is a microwave recipe, so you don’t need any other utensils than just a pan. Also, keep your ingredients handy to save time.
  • Add enough salt to balance the sweetness of the Rava and the cashews.
  • Adding some ghee to the mixture helps maintain the consistency in texture. With enough ghee, the texture becomes creamy and not mushy.
  • When microwaving the Rava mixture on high heat, keep stirring once in a while as the mixture dries up quickly. As a result, it might stick to the bottom of the pan.
  • If the Rava Pongal still has some water, microwave it further to improve the texture and remove the excess water. It will help render a smooth texture.
  • It tastes good with either a Sambhar, coconut chutney, or green coriander chutney. So, when serving it for breakfast, add some side dishes to turn a simple meal into a delicious, scrumptious breakfast.
