Here’s the recipe for Tamatar Pyaz Ki Sabzi.

Ingredients:

  • 4 tomatoes (quartered)
  • 1 onion (thinly sliced)
  • 2 green chillies (slit)
  • 4 garlic cloves
  • 1 tsp turmeric powder
  • 1 tsp red chilli powder
  • Salt, to taste
  • ½ tsp mustard seeds
  • 1 sprig of curry leaves
  • ½ tsp mustard oil
  • 1 bay leaf
  • 2 cloves
  • 1-inch cinnamon stick

Method:

  • Heat the oil over medium heat in a pressure cooker, add the mustard seeds, and wait for them to start to crackle.
  • Add the  bay leaves, curry leaves, cloves, and cinnamon stick once it starts to crackle, and sauté for a few seconds.
  • Add the garlic, onion, and green chilies.
  • The onions should be sautéed until they start to soften.
  • Add the tomatoes, turmeric, red chilli powder, and salt to taste once onion are tender and soft.
  • Add  a few tablespoons of water, and cover the pressure cooker.
  • Pressure cook for two whistles and then turn off the heat. 
  • Once the pressure has been released, taste the Tamatar Pyaz Ki Sabzi and adjust the salt and spices as necessary.
