Summer Delights: Cool Off With These 9 Recipes

By mid-April, the oppressive heat had already started. One can always hunt for things to brighten one up occasionally during the summers when nothing in the present feels quite perfect. A variety of tasty and delectable treats are also available during the summer. The majority of these delicacies honour seasonal fruits that are only present for a short time throughout the year. There is no shortage of "summer specials," so here are several to prepare. They range from spicy to acidic, to cool and downright decadent. 

Mini-Fruit Pizzas 

What better way to encourage children to eat their fruits and vegetables than by placing them on top of pizza? Using pizza base from a store-bought might help you prepare these tiny bits more quickly. Just bear in mind that if you prepare these too long ahead of time, the fruit will begin to dry out on top while simultaneously leaking juice into the base. 

Kulle Ki Chaat 

Fresh fruits and vegetables are used to create a unique chaat that is hollowed out from the centre and filled with a delicious pomegranate and chickpea filling before being topped with chaat masala and lemon juice. This chaat can be made with summertime fruits like watermelons. 

Watermelon Popsicles 

Even though watermelon is already a classic summer treat, this recipe makes it even more icy and entertaining! Simply combine lime juice and seedless watermelon and pour the mixture into a mould is all that is required. Freeze, let it set, then savour. 

Rainbow Fruit Kabobs 

You literally eat these with  your eyes. The more colourful a dish may be prepared, the more appealing it becomes. These fruit kabobs are not only colorful, but they are also all-natural. You know this is healthful and additive-free because you aren't depending on food colouring to achieve those gorgeous colours.  Finding a wide variety of colours is crucial. Use mango and strawberries combined with kiwi and pineapple, for instance. If you can get some ripe plums, they make a fantastic addition as well. 

Matka Malai Kulfi 

Without some creamy kulfi, Indian summer is all but hard to imagine. We are frequently faced with a lack of options when it comes to kulfis (not that we are complaining), but lately, we have become fixated on this mataka malai kulfi due to its extreme creaminess. 

Strawberry Milkshake 

It's true that milkshakes are cold, but they are also thick, creamy, and decadent at the same time. Something that's so heavy isn't the best choice when the temperature is over 90°F. Therefore, omit the ice cream from this recipe. It is bursting with the flavour of fresh strawberries and is also quite creamy. Simply put, there is no ice cream included in the recipe. So how can something be so thick and creamy without having all those extra calories? Fruits frozen!  Ensure that your blender is capable of handling all of those large, juicy berries. 

Rainbow Veggie Pinwheels 

Here is another delicious, filling, and very colourful summer snack. Roll the cucumber slices or spinach leaves and fill the brilliant and flavour-enhancing combination of cream cheese and dry ranch mix. However, if you like hummus or Boursin cheese, you may easily use those instead. Or why not try a decadent whipped feta dip because they contain spinach.  

Frozen Yogurt Bark with Berries 

There is no doubt that this is the best summer snack on this list! Not to mention that it's super delicious and ridiculously easy to make. The fact that this consists solely of frozen yoghurt and fruit is its best feature. You can use non-fat vanilla or Greek yoghurt and a tiny bit of honey or agave syrup to sweeten it. You can top it with any fruit after you've spread it out on a lined baking sheet. The best fruit to use is a berry, but feel free to get inventive. 

Make-Ahead Creamy Fruit Salad 

We enjoy fruit salads a lot. Make this delectable combination and, right before serving, add sliced bananas. Use any of your personal favourite fruits. Enjoy the freshness by adding some curd.
