Musk Melon Fries Salad
Ingredients
For Musk Melon Fries
- 1 medium musk melon, cut into thick strips
- 1/2 cup besan (gram flour)
- 3 tbsp rice flour
- 1 tsp red chili powder
- 1 tsp chaat masala
- ¼ tsp turmeric powder
- 1 tsp ajwain
- 4-5 strands of saffron
- Salt to taste
- 100 ml water (for batter)
- Oil for frying
For Salad
- 1 cup mixed leafy greens
- ½ cup cherry tomatoes, halved
- 3 tbsp crushed roasted peanuts
- 4 tbsp pomegranate seeds
- 2 tbsp chopped mint leaves
For Dressing
- ½ cup hung curd
- 2 tbsp tamarind chutney
- 1 tbsp dates paste
- 1 tsp black salt
- ½ tsp roasted cumin powder
- 1 tsp honey
- 2 tsp chilli powder

Method
- Mix besan, rice flour, spices, saffron, and salt in a bowl. Add water to make a thick batter.
- Dip musk melon fries in the batter and deep-fry until golden brown. Drain the excess oil on paper towels.
- Mix the salad ingredients in a bowl.
- Whisk dressing ingredients and drizzle over the salad.
- Top with crispy musk melon fries and serve immediately.
Green Papaya Salad
Ingredients
- 1 cup raw papaya, shredded
- ½ cup carrot, shredded
- ¼ cup cucumber, julienned
- ¼ cup roasted peanuts, crushed
- 2 tbsp fresh coriander leaves, chopped
- 3 tbsp mint leaves, chopped
- 4 tbsp pomegranate seeds
For Dressing
- 1 tsp mustard oil
- 2 tbsp Dijon mustard
- 2 tbsp jaggery syrup
- 2 tbsp white wine vinegar
- 2 tbsp olive oil
- A pinch of pink salt
- 1 tsp green chilli, finely chopped
Method
- Heat mustard oil, and add green chilli.
- In a bowl, mix jaggery syrup, olive oil, pink salt, white wine vinegar, and Dijon mustard with the oil.
- Toss the dressing with the shredded papaya, carrots, and cucumber.
- Garnish with peanuts, coriander, and pomegranate. Serve fresh.
Sprouts And Coconut Salad
Ingredients
For Salad
- 1 cup mixed sprouts (moong, moth, black chana)
- 1/2 cup grated coconut
- 1/4 cup finely chopped cucumber
- 1/4 cup finely chopped tomatoes
- 3 tbsp grated raw mango
- 2 tbsp chopped fresh coriander
For Tempering
- 3 tsp coconut oil
- 1/2 tsp mustard seeds
- 1 tsp chana dal
- 1 tsp urad dal
- 1 finely chopped green chili
- 5-6 curry leaves
- 1 tbsp lemon juice
Method
- Heat coconut oil in a pan and add mustard seeds, chana dal, urad dal, curry leaves, and green chilli. Sauté until fragrant.
- In a bowl, mix sprouts, grated coconut, cucumber, tomatoes, and raw mango.
- Pour the tempering over the salad and mix well.
- Add lemon juice, and garnish with fresh coriander.
