So here’s an easy and delicious recipe you can bake with your significant other or loved ones and celebrate Valentine’s Day safely at home. Ingredients: 

  • 1 cup whole wheat flour
  • ½ cup all-purpose flour (Maida)
  • ½ cup cold-pressed organic sunflower oil/vegetable oil
  • ¾ cup sugar/sugar-free (you can choose and adjust as per taste)
  • 1 cup regular milk or soy milk, or almond milk
  • 1 cup water
  • 1 cup seedless dates
  • ½ cup walnuts
  • 2 teaspoon instant coffee
  • 1 tablespoon cacao nibs or small chocolate chips – (optional, but if you add, adjust the sugar accordingly)
  • ½ teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 pinch salt

Instructions:

For The Cake Batter:

  1. Roughly chop the walnuts and dates. Keep them aside
  2. Line or grease the pan with parchment paper
  3. Take milk in a pan and heat. After switching off the flame, add the coffee powder and stir well.
  4. Now, add the dates and mix well. Let the dates sit in the milk for around 15-20 minutes. 
  5. Add the dry ingredients in a bowl and sieve them – whole wheat flour and all-purpose flour, salt, baking soda, baking powder.
  6. Next, you have to pre-heat the oven at 250 degrees C/392 f
  7. In the bowl of sieved dry ingredients, add powdered sugar and mix it well
  8. Now add the soaked dates with the milk along with 1 cup of water and oil
  9. Use an electric beater at medium-high speed till the batter is uniform and mixed evenly. Assure that the batter isn't over-mixed
  10. Fold the cocoa nibs or chocolate chips in the batter, and then add the walnuts. Mix it well
  11. In the greased cake pan, pour the batter using a spatula and spread it evenly.
  12. Tap and shake the pan from the sides to make it even
  13. Now put the cake pan in the preheated oven and bake the cake for 45 minutes to 1 hour
  14. Now, check the cake by inserting a toothpick, and if it comes out clean, the cake is ready.
  15. You can serve the delicious date and walnut cake warm with some tea or coffee in the afternoon and enjoy it with loved ones at any time of the day.
