Low-Calorie Pumpkin Soup 

Ingredients 

  • 1 pumpkin 
  • 3 chopped garlic cloves  
  • 1 chopped red chilli 
  • 1 coconut milk or cream 
  • Lots of coriander leaves 
  • Salt and pepper 

Method 

  • Take pumpkin and cut it into quarters. Scoop out the seeds and remove the skin. Then, chop the flesh into small chunks and boil it in water until it becomes soft and tender. 
  • Add chilli, garlic, coriander, salt and pepper to a blender. Blend well. 
  • When the pumpkin is soft enough, drain the water. Add pumpkin into the blender with the chilli mix and blend. 
  • Add the mixture back into a saucepan and add the coconut milk and let it cook on simmer. Add the reserved cooking water. 
  • Serve the soup in large bowls and add chopped coriander for garnish. 
  • Serve!
