 Cooking Time: 30 minutes

Servings: 250 gms

 Ingredients:

1.5 cups All Purpose Flour (maida)

2 tsp Medium Rava (fine sooji)

1 tsp Cumin Seeds

1 tsp Salt

1 tsp Red Chilly Powder

Water

2 tsp Hot Oil

2 cups Cooking Oil

Method:

Take a big bowl, put maida, fine rava and cumin seeds in it. Now, add salt and red chilly powder as per your taste. Give a quick mix of all the ingredients. On the other hand, heat 2 tsp of oil in a pan and put it into the flour as well.

Next, Crumble the flour in such a way that it turns into a shape. Now knead a stiff dough by adding little by little water to it. Once done, cover it with a damp cloth and leave it aside for approximately 8 to 10 minutes

After the resting time, knead the dough once again. Now, divide the dough into two equal parts and roll them to form a thin disc. Cut the pieces in a diamond shape with a pizza cutter. Once done, separate them from each other

Now take a wok and heat oil in it. Once done, put the Shankarpali to it. Deep fry each one of them and take them out on tissue paper once they turn golden brown

Finally, crispy and spicy shankarpali is ready to serve.

Notes:

You can also put spices such as mint, and pepper according to your taste

Ensure to not knead the dough very loose. It should be stiff.

Store them in an air-tight container so that their crispy-ness lasts longer.

It is considered a perfect and light evening snack which can be paired with tea or coffee.
