Steps Of Preparation Process

  1. All ingredients should be well cleaned, with any stones or broken parts removed. Let them dry in the sun for one to two hours after spreading them out on different clean, dry cloths. Arrange ingredients according to how long they need to roast.
  2. First, toast the finger millet over medium heat until it begins to smell nutty. Proceed to roast the foxtail and pearl millet separately until they start to become a light golden colour. Roast each of the following: barley, sorghum, wheat, maize, and red rice until crisp.
  3. Roast the black channa till it becomes aromatic and a little darker. Green gramme comes next, stirring constantly till light golden. Since fried gramme dal requires little roasting, process it last among the pulses.
  4. Dry roast peanuts until a nutty fragrance appears and the skin begins to break. Almonds and cashews should be lightly roasted until only warmed, taking care not to let them brown. Put aside to cool fully.
  5. Cardamom pods are dry-roasted till their scent is released. To make a dried ginger slice crisp and fragrant, roast it. Before processing, let every spice cool fully.
  6. Grind the grains and toasted millets into a fine powder. Separately grind the pulses until they are fine. Avoid overprocessing while grinding nuts to a coarse powder.
  7. In a large mixing bowl, combine all of the ground ingredients. Stir in the spice powder and stir well. To guarantee a consistent texture, sieve the ingredients.

Storage Tips: Keep in a glass jar that is sealed. Store away from direct sunlight in a cool, dry location. Handle with dry, clean spoons.
