Sarson Ka Saag is a traditional Punjabi vegetarian dish made up of Green Mustard Leaves. Originating from Punjab, Sarson Ka Saag is now quite famous in the Indian subcontinent, especially in northern India. Sarson is actually the leaf of the mustard plant. Yes, the same mustard is used to make mustard oil and is highly used in cooking. During winters and spring, the fields of Northern India and Punjab are flooded with Sarson Ka Phool. The green leaves of this plant are used to make Sarson Ka Saag and they are very healthy because of being high in nutrients. In India, a total of 9 varieties of Saag are found among which, Sarson Ka Saag is the most common and popular one.

Ingredients For Sarson Ka Saag:

  • Mustard Greens 
  • Spinach Leaves
  • Roughly Chopped Ginger
  • Green Chillies
  • Sliced Garlic
  • Turmeric Powder
  • Chilli Powder
  • Salt
  • Water
  • Corn Flour

For The Tadka:

  • Ghee
  • Cumin Seeds
  • Chopped Garlic
  • 4-Chopped Onion 
  • Red Chilli Powder
  • Salt
  • Garam Masala

Method:

  1. For Sarson Ka Saag: Firstly, mix the spinach leaves and mustard greens and add them to a pressure cooker. Now add ginger, green chillies, garlic, turmeric powder, chilli powder and water to it. Then cook all these ingredients in the cooker for 5 to 7 whistles. After the lid is opened, add cornflour and let it thicken on low flame.
  2. For Tadka: Take a pan and add ghee, cumin seeds, garlic and onion to it. Then let the onions cook till brown and then add red chilli powder and salt. Now cook it on high flame.
