Pomelo Salad  

Pomelo salad is a refreshing appetiser made by combining chunks of pomelo fruit with roasted coconut, peanuts, and ground chicken. The salad is then tossed with a dressing of chilly, shallot, lemongrass, lime juice, soy sauce, and fresh herbs like mint and cilantro to give it a balance of flavours and textures. This easy-to-make salad makes a perfect starter or side dish.

Pomelo Sorbet with Ginger and Basil  

To make a refreshing pomelo sorbet, first cut the fruit in half and carefully remove the flesh. Be sure to peel away any remaining fruit from the hollowed rind. Arrange the fruit in a lined pan and freeze until solid. Then blend the frozen pomelo with coconut water, ginger, lime, honey, basil and salt until smooth and creamy. Pour the sorbet into the freezer container to set completely before slicing or scooping.

This dish works well with tortilla chips, but try it in tacos, burritos, or as a topping for grilled vegetables, tofu, or tempeh. To make this salad, carefully remove the thick, white pith and seeds from the pomelo. Break the segments into bite-sized pieces. In a bowl, gently toss the pomelo with the onion, garlic, orange zest and fresh orange juice. Add chunks of pineapple and a touch of chili. Mix everything together, and garnish with torn basil before serving.

Spiced Pomelo Fruit Cocktail  

Simmer sugar, water, cinnamon, cloves, and nutmeg in water to dissolve the sugar and infuse flavour. Strain the cooled, spiced simple syrup into a jar. Then mix pomelo juice, tequila, and the syrup with ice. Strain into a glass over ice. Garnish with lime and pomelo for a refreshing cocktail.
