Ingredients

 1/2 cup granulated sugar

 1/3 cup salted butter (melted)

 1 1/2 tablespoons red food colouring

 1/2 teaspoon salt

 2 1/3 cups all-purpose flour

 2 cups of milk

 2 tablespoons white vinegar

 2 teaspoons baking powder

 1/2 teaspoon baking soda

 2 large eggs

 2 teaspoons vanilla extract

 3 tablespoons cocoa powder

 For garnish (optional): fresh raspberries and mint leaves

For the cream cheese glaze:

 a third of a cup of milk

 1/2 teaspoon vanilla extract

 6 tablespoons softened butter

 2 cups powdered sugar

 170 g cream cheese (softened) 

Method:

 A non-stick electric griddle should be preheated to 350 degrees. Flour, cocoa powder, baking powder, baking soda, and salt should all be combined in a mixing bowl before setting it aside. Pour the milk into a liquid measuring cup, add the vinegar, and whisk. Let the mixture sit for two minutes.

 Add sugar, eggs, red food colouring, vanilla, and melted butter to the milk mixture in a separate, large mixing bowl. Stir the mixture thoroughly. Add the dry ingredients gradually while whisking, then blend just until combined.

 Depending on the size of your pancakes, add 1/4 to 1/3 cup of batter at a time to the heated griddle.

 Pancakes should be cooked until bubbles appear on the top surface before flipping and continuing to cook on the other side.

 Garnish with fresh raspberries and mint leaves, if desired, and serve warm with a cream cheese glaze.

 For the cream cheese glaze, combine the cream cheese and butter in a mixing bowl and beat with an electric hand mixer on medium speed until well combined and frothy, about 2 minutes.

 Then add the remaining ingredients and whisk everything together for approximately a minute; if needed, add more milk to thin it out. Keep it in the refrigerator in an airtight container.
