Ingredients:

3 cups Red Amaranth Leaves, tightly packed

1 Onion, finely chopped

4 cloves Garlic, finely chopped

2 Green Chillies, finely chopped

4 tablespoons Fresh coconut , grated

1/2 teaspoon Cumin seeds (Jeera)

1 sprig Curry leaves

2 teaspoons Oil

Salt, to taste

Method: 

To begin making the Red Amaranth Leaves Stir-fry Recipe (Goan Style Red Amaranth Stir Fry), Rinse the red amaranth leaves and discard spoiled leaves if there are any (you can roughly chop the bunch of red amaranth with a knife or cut it with a kitchen scissor)

Heat oil in a heavy bottomed pan, add the cumin seeds, and curry leaves and let it splutter

Add the garlic cloves and saute for a minute

Add the chopped onion, and green chillies and stir occasionally 

Saute till onions turn translucent

Add the chopped amaranth, season with salt and let it cook, this will take around 5 minutes to cook

Once the water is all dried out, add the grated coconut, mix well and switch off the heat

Serve your red amaranth leaves stir-fry with steamed rice or roti for a weekday meal
