Ingredients:

1 medium carrot, grated

1/2 cup pitted dates

1/2 cup protein powder

1/4 cup almond meal

3/4 cup shredded coconut

1/4 tsp cinnamon

1/4 tsp ginger

1/4 tsp nutmeg

1/4 tsp salt

Method:

Pulse all ingredients except for the coconut in a food processor until just combined. Stir in the shredded coconut and roll into balls, coat with extra coconut.
