Ramadan 2025: Chef Sheikh Kadir Shares Kebab Recipes For Iftar

With the beginning of the holy month of Ramadan, Muslim devotees across the globe fast for the entire day. Breaking the fast in the evening with Iftar, the celebratory meal calls for traditional recipes. But making something new each day can require a little push. The easiest and most delicious way to try new Iftar recipes is to add different types of kebabs. 

Whether you’re making biryani or meat-based stew, you can easily pair your main course with crispy kebabs served with a side of chutney and laccha onion rings. To help you get started, here are some recipes shared by Chef Sheikh Kadir from Club Mahindra. So, why don’t you follow these step-by-step recipes and make this Ramadan feast the one to remember?

Mutton Galawat Kebab

Ingredients:

  • 500 gm mutton mince 
  • 100 gm brown onion             
  • 50 gm cashew nuts             
  • 40 gm papaya skin             
  • 5 gm rose petals        
  • 5 gm stone flower             
  • 20 gm Kashmir chilli powder         
  • 10 gm coriander powder         
  • 10 gm jeera powder             
  • 5 gm cardamom powder         
  • 5 gm saffron                       
  • 200 gm ghee                 
  • 20 ml kewra water             
  • 10 gm garam masala powder             

Ingredients:

  1. In a large mixing bowl, combine minced mutton, raw papaya paste, ginger-garlic paste, garam masala powder, red chilli powder, cumin powder, coriander powder, clove powder, cinnamon powder, cardamom powder, salt, brown onion paste, and brown cashew paste. Mix well. 
  2. Cover the mixture and let it marinate in the refrigerator for at least 2 hours. 
  3. After marination, place the mixture in a large bowl and infuse it with smoke by using charcoal and ghee. 
  4. Shape the mixture into small, flat patties. 
  5. Heat ghee in a frying pan over medium heat. 
  6. Shallow fry the patties until they are golden brown and cooked through on both sides. 
  7. Serve hot with mint chutney and laccha onions. 

Mutton Shami Kebab

Ingredients:

  • 500 gm mutton             
  • 200 gm Chan Nadal             
  • 30 gm onion                 
  • 5 gm ginger                 
  • 10 gm garlic                 
  • 5  gm red chilli whole             
  • 10 gm whole garam masala        
  • 1  gm stone flower             
  • 5 gm zeera whole             
  • 3 gm turmeric             
  • 5 gm Kashmiri chilli  powder     
  • 5 gm Zeera powder             
  • 5 gm coriander powder         
  • 5 gm garam masala powder     
  • 100 gm ghee                 
  • 60 ml lemon juice             

Instructions:

  1. In a saucepan, add minced mutton, soaked chana dal, chopped onion, green chillies, whole ginger-garlic, whole garam masala, red chilli powder, turmeric powder, cumin powder, and salt. Add enough water to cover the ingredients. 
  2. Cook until the mutton and dal are tender and the water is completely absorbed. Allow it to cool. 
  3. Grind the mixture into a smooth paste in a food processor. Add chopped coriander leaves, lemon juice, and ghee, then mash well. 
  4. Shape the mixture into small patties and lightly dust them with roasted chana powder. 
  5. Heat a pan and shallow fry the patties until golden brown on both sides. 
  6. Serve hot with mint chutney and laccha onions.
