Papad is an Indian deep-fried dough made of essentially black gram bean flour. But flours made of lentils, chickpeas, rice, tapioca, millet or potato are also used. Papad is typically served as an appetiser in South Asian countries.


In India, papad is known by several names like appalam in Tamil, happala in Kannada, pappada in Odia and papad in most north Indian states. Seasonings like chilli, cumin, garlic, black pepper, salt and peanut oil are used to make papads more flavourful. 


Papad is prepared in different ways such as toasted over a flame, deep-fried, grilled or microwaved. Some papad recipes are rice papad, ragi papad, garlic papad, aloo papad, shakuli, black pepper papad and sabudana papad.
