Marinades are a wonderful way to preserve the meat in a moist state and infuse the maximum amount of flavour into it. It helps improve the texture of the meat and will kickstart the recipe before one begins cooking. For a zesty marinade, add oranges and limes for that citrus kick. If one prepares the meat creamy, marinating it in greek yoghurt is the way to go. Adding mirin, rice vinegar, sriracha, and fresh ginger will create a marinade that is sweet, tangy, and spicy all at the same time. A common Asian meat marinade includes soy sauce, gochujang, brown sugar, sesame oil, garlic, and ginger whisked till it achieves a smooth consistency.
A touch of red wine in any marinade helps balance its sweetness. Rubbing the meat with garlic, parsley, lemon juice, and mayo will keep its juiciness intact after cooking. The marinade can also double as a sauce. Fresh orange, red chile, scallions, and herbs make for a good sauce/marinade.
