North Indian cuisine is filled with spicy and aromatic gravies, stir-fries, and slow-cooked tender meat. The widespread availability of vegetables, fruits, grains, and spices makes the meat dishes look vibrant. The use of pure ghee and fresh cream makes this type of cuisine very rich. Some classic examples of North Indian meat dishes that are well-known and liked are Kashmiri Rogan Josh, Chicken Dum Biryani, Nihari Gosht, Butter Chicken, and Rajasthani Laal Maas. 

The dish kalmi kebab originated during the Mughal times. It is prepared by marinating chicken drumsticks and shallow-frying them on a high-heat pan or inside a tandoori oven till they turn crispy golden. The marinade is prepared with yoghurt, cream, ginger, garlic, lemon juice, turmeric powder, cashews, jeera powder, garam masala, red chilli powder and black pepper. The kebab is usually paired with pickled onions, rice, or chutneys.

Another favourite among North Indian meat dishes is the classic tandoori chicken. The chicken is marinated in yoghurt and seasoned with tandoori masala, nutmeg, and cumin. The meat is then put on skewers and cooked in cylindrical clay ovens called tandoors at very high temperatures. The resultant meat is smoky and succulent. Other meats are also popular among North-Indian dishes, such as the Kashmiri aab gosht (lamb), Rajasthani laal maas (lamb), Himachali mutton rara, and Nihari (beef).
