Adding egg to a grilled cheese sandwich makes it more delicious and rich enough to pass as a full-fledged meal rather than just a quick bite. An egg is rich in protein, iron, and vitamins and also has nine essential amino acids. It is super easy to cook and ready in just 15 minutes. The idea of grilling bread and cheese has been around for centuries, grilled cheese sandwich was first introduced in France in 1910 and later, popularised in America. During the Great Depression, grilled cheese sandwiches were a cost-effective meal among the masses. During World War II, the navy cooks followed a government-issued cookbook that included a recipe - ‘American cheese filling sandwich’. Even egg sandwiches were present even in World War I when British troops came up with the ‘egg banjo’. It is a sandwich of a runny fried egg between two thick slices of bread, consumed with a mug of a drink of tea and rum. In the later versions of the grilled cheese sandwich, we also find bacon and tomatoes. In more evolved versions, we find the sliced bread is also replaced with gourmet bread, like sourdough or rye. One such version is this one.
1. 3 eggs (beaten)
2. ¼ cup red bell pepper (chopped)
3. ¼ cup cheddar cheese (shredded)
4. ⅛ cup green onion
5. ¼ cup bacon (cooked and chopped)
6. ¼ cup spinach (chopped)
7. ½ teaspoon salt
8. ½ teaspoon pepper
9. 2 slices of sourdough bread
10. 2 tablespoons butter
11. 3 slices Colby Jack cheese
Method:
1. In a mixing bowl, add beaten eggs, bacon, cheese, peppers, green onion, spinach, salt and pepper. Mix until combined.
2. Cut out the centre of the bread slices.
3. Heat butter in a non-stick pan.
4. Place bread slices in the pan and fill the centre egg mixture. Cover the pan.
5. Cook for about 3 minutes and then flip.
6. Then, cook for another 3 minutes.
7. Add cheese slices to 1 slice of bread.
8. Place the remaining slice on it and cover the pan with a lid to melt the cheese.
9. Remove from the heat and it is ready to serve.
