Ingredients

For Dosa Batter:

  • 3 cups dosa rice
  • ½ tsp fenugreek seeds
  • 1 cup urad dal
  • 2 cups puffed rice (washed and squeezed)
  • 1½ tsp salt

For Pizza Topping (per dosa):

  • 1 tsp butter
  • 1 tsp butter
  • 1 tsp pizza sauce
  • 1 tbsp onion, chopped
  • 1 tsp jalapeno, chopped
  • 1 tbsp capsicum, chopped
  • 1 tbsp olives, sliced
  • ¼ tsp mixed herbs
  • ¼ tsp chilli flakes
  • 3 tbsp grated cheese (preferably mozzarella)

Dosa Batter Preparation

Start by soaking 1 cup of rice and ¼ cup of urad dal in water for 6 to 8 hours or overnight if you're creating your dosa batter from scratch. Drain the water after soaking, then use as little water as possible to incorporate the mixture into a uniform batter that is pourable. The batter's flavour will be enhanced by fermenting it for 8 to 12 hours at room temperature. Before cooking, stir thoroughly and season with salt. If you are using  store-bought batter, give it  a good mix before using. Make sure the batter is neither too thick nor too runny.

Instructions

  • Heat a nonstick pan or tawa over medium heat and lightly coat it with oil or ghee to prepare pizza dosa.
  • A ladleful of dosa batter should be poured over the heated griddle and carefully spread into a circle, not too thin, about 5 to 6 inches in diameter.
  • To guarantee consistent frying and crispiness, drizzle some oil around the edges.
  • To ensure that one side of the dosa is cooked through, cover it with a lid and cook it for one minute. It's time to add your toppings when you notice bubbles forming on top and the edges becoming golden brown.
  • Cover the cooked dosa's surface with a coating of ketchup or pizza sauce. Then evenly distribute your preferred vegetables, such as corn, onions, and capsicum, and cover with a good amount of grated cheese.
  • Cover once more for a short while until the cheese melts into the toppings.

Tips To Make Pizza Dosa

Initially, keep the heat at medium throughout the cooking process; high heat can burn the bottom while leaving the top raw. Add fresh ingredients to your food as toppings; this will improve its flavour and nutritional content.

Trying out different cheeses can provide a variety of effects; for an interesting flavour profile, try combining mozzarella and cheddar. In addition, you can also change the toppings as per your liking and add olives to give it a kick or jalapenos for some spice. To enjoy the pizza dosa, serve it when it’s still warm and crispy.

Common  Mistakes To Avoid

Pizza dosas can be made easily, but there are a few frequent blunders that can ruin the dish. A common mistake is to use cold batter straight out of the fridge. To improve fermentation, always allow the batter to reach room temperature before cooking. Adding too many toppings to your dosa might result in uneven cooking and sogginess, which is another problem. To keep things crisp and to ensure consistent cooking throughout, limit the number of toppings you use.

Finally, if you're using nonstick surfaces to flip or serve your pizza dosa, don't use metal utensils since this can scratch them. To protect your cookware while you make this delicious dish, use wooden or silicone spatulas instead.
