Ingredients:

For paneer stuffing:

  • 1 tbsp Butter
  • 1 cup Paneer / cottage cheese (cube)
  • 2 tsp Oil
  • 1 Onion (finely chopped)
  • 1 tsp Ginger Garlic paste
  • ¼ tsp Turmeric
  • ½ tsp Kashmiri red chilli powder
  • ½ tsp Coriander powder
  • ¼ tsp Cumin powder
  • ½ tsp Garam masala
  • 1 cup Tomato pulp
  • 2 tbsp Water
  • ½ tsp Salt
  • ½ Capsicum (sliced)
  • 2 tbsp Coriander (finely chopped)

Frankie masala:

  • ½ tsp Kashmiri red chilli powder
  • ¼ tsp Turmeric
  • ½ tsp Cumin powder
  • ½ tsp Coriander powder
  • ½ tsp Garam masala
  • ½ tsp Chaat masala
  • ½ tsp Amchur
  • ¼ tsp Salt

Other ingredients:

  • 2 Wrap
  • 2 tbsp Mayonnaise (eggless)
  • 2 tsp Chilli sauce
  • 2 tbsp Cabbage (shredded)
  • 2 tbsp Carrot (grated)
  • Few Onion (sliced)
  • 1 Capsicum (sliced)
  • 2 tsp Lemon juice
  • 4 tbsp Cheddar cheese (grated)

Instructions to make Paneer Capsicum Frankie:

  • First, roast 1 cup of cubed paneer in 1 tablespoon of butter in a kadai, paneer should be roasted till golden brown, then keep aside
  • Add 2 teaspoons of oil now and sauté 1 onion with 1 teaspoon of ginger garlic paste
  • Sauté onions until they become a dark brown colour
  • Add an additional 1/4 teaspoon each of turmeric, 12 teaspoon each of chilli powder, coriander, cumin, and garam masala
  • Cook spices on a low heat until they are aromatic
  • Blend three ripe tomatoes to a paste to make tomato pulp
  • Add 1 cup of tomato pulp now, stirring well
  • Sauté the tomato paste until the oil separates
  • Moreover, add 2 tablespoons water and 1/2 teaspoon salt
  • Stir in the roasted paneer and half the pepper
  • Cover and cook for 4 minutes
  • Now add in 2 tablespoons of coriander, the paneer filling is ready
  • Next, combine 1/2 teaspoon chilli powder, 1/4 teaspoon turmeric, 1/2 teaspoon cumin powder, 1/2 teaspoon coriander powder, 1/2 teaspoon garam masala, 1/2 teaspoon chaat masala, 1/2 teaspoon amchur, and 1/4 teaspoon salt in a small bowl
  • Once fully combined, the spice mixture is ready
  • First, take a wrap or chapati to make the Frankie 
  • Add 1 tsp of chilli sauce and 1 tbsp of eggless mayonnaise
  • Mix well and evenly spread over the wrap 
  • Add 2 tablespoons of the prepared paneer stuffing now, spreading it just a little
  • Add 1 tablespoon each of cabbage, carrot, capsicum and a few onions on top
  • Add prepared Frankie masala and 1 teaspoon of lemon juice
  • Also, evenly grate 2 tablespoons of cheddar cheese
  • Ensure a secure fit by tucking the ends of wrap like a roll
  • Finally, slice the paneer Frankie in half and devour
