One Pot Recipe: A Quick And Tasty Mixed-Vegetable Dish

Blend of many vegetables, Mix vegetables is a healthy and light dish which is perfect for lunch and dinners. Easy to cook, the dish gives you the liberty to use as many or as few vegetables as possible. You can make this dish with 3 vegetables or more than 10 vegetables depending on your mood and season. It is a famous North Indian recipe which can be cooked quickly. 

Here’s the recipe.

Cooking time: 25 minutes

Servings: 4

Ingredients:

  • 3 tsps oil 
  • 1 tsp cumin seeds
  • ½ cup finely chopped onions 
  • 1 tsp ginger-garlic paste
  • 1 cup finely chopped tomatoes 
  • ½ tsp turmeric powder 
  • ½ tsp Kashmiri chilli powder 
  • 2 tsp coriander powder 
  • ½ tsp garam masala
  • ½ tsp chopped green chilies 
  • ⅓ to ½ cup chopped potatoes
  • ⅓ cup chopped capsicum
  • ⅓ cup chopped carrots
  • ¼ to ⅓ cup chopped French beans
  • 1 cup chopped cauliflower 
  • ½ cup green peas 
  • 1½ cups water 
  • Salt, as required
  • 2 tsps cream or 3 tsps milk
  • 8 to 10 paneer cubes 
  • 3 tsp chopped coriander leaves

Method:

  • Take a pan and heat oil in it. Put cumin seeds and let them crack.
  • Now, put finely chopped onions and stir them till they turn light golden.
  • Next, include the ginger-garlic paste and stir it for approximately 10 to 12 seconds or till the raw aroma of these ingredients goes away. 
  • Put the tomatoes in the pan. Saute them on a low flame till the tomatoes become soft.
  • If these ingredients stick to the pan, sprinkle a little water and stir them together. 
  • Once the mixture gets smooth, and glossy put turmeric powder, Kashmiri red chilli powder, coriander powder and garam masala powder into it and stir the spices well.
  • Saute all the ingredients for approximately 1 minute.
  • Next put the chopped veggies, green peas and green chillies as well.
  • Now put water and salt as per your taste and mix again.
  • Cover the pan with a lid and let all the veggies cook on a low to medium flame for a while.
  • Keep a check on the pan while all the veggies are cooking.
  • Put more water if the water which is already there dries up and if the veggies are not yet cooked properly.
  • The moment veggies are cooked and look tempting, turn off the flame and put 3 tsp chopped coriander leaves. Mix again. 
  • You can also add paneer before putting coriander leaves. 
  • The dish can also be garnished with fried paneer cubes or mint leaves.
  • The dish is ready to serve hot.

Points to remember:

  • You can make this recipe in quantity to use the next day as well. 
  • If you don’t add milk or cream, it is a vegan recipe. 
  • For a richer taste, you can add cashew nuts as well. 
  • If you want to use cream or malai or milk, you can also add it once the veggies are half cooked.
