Ingredients

  • 2 sheets rice paper
  • Oil for frying
  • 250 gm prawns
  • A handful of spring onions for garnish
  • Kimchi Dip
  • 1 clove garlic
  • 1 tbsp butter
  • 1 tsp oil
  • 1 chopped red chili
  • 1 tsp soy sauce
  • 4 to 5 pc torn lettuce

Method

  • Cut the rice paper into triangles and deep fry them.
  • Make sure you pop them out very quickly as they puff up
  • Chop fresh prawns, and sauté it with some garlic and chilies.
  • Season with salt and pepper and soy sauce. Remove and keep aside.
  • Now in the rice paper crisp cups add some lettuce leaves.
  • Then, add cooked prawns and top it up with some kimchi dip garnished with greens.

Some tips:

  • One must make sure that the oil kept for frying is super-hot. Don't take more than 4 to 5 seconds.
  • Make sure you only put the filling right before serving. Otherwise, the rice paper will break and become soggy.

Happy New Year!!
