New Year 2023: Flatbread Canapes Three Ways

Bread of any kind is such an essential part of a social eating experience that almost no meal is complete without some form of it. When you host a party or get invited to one, planning and figuring out what to make for it could essentially take up a lot of your headspace. Flatbreads are a fun way to feed large groups of people, with very little effort to spruce it up. You could add any number of toppings and mix and match ingredients to make something absolutely delicious for everyone to enjoy.

With any kind of flatbread recipes, it is important to consciously choose a solid base for whatever it is that you decide to put on it. You could of course use any store-bought or leftover pizza dough or just buy a stack of pita or flour tortillas for this. Ideally, any bread that can hold its own and attain a moreish texture when toasted should be perfect. Here’s three delicious ways to make a bunch of these for your year-end bash:

Tomato, Mint & Halloumi Flatbread

Ingredients:

  • 2 pita breads
  • 1 tomato
  • ¼ cup halloumi cheese, diced
  • 1 teaspoon dried mint powder
  • Handful of fresh mint
  • Olive oil to drizzle

Method:

Deseed and finely chop the tomato and spread on the surface of a pita bread. Add some diced halloumi cheese on top and sprinkle some dried mint. Drizzle with olive oil and toast on a pan or grill until the pita bread becomes crisp. Garnish with plenty of freshly chopped mint leaves and serve.

Coriander & Chilli Flatbread

Ingredients:

  • 2 pita breads
  • 1 teaspoon coriander seeds
  • 2 fresh red chillies, chopped finely
  • Handful of fresh coriander
  • Salt to taste
  • Olive oil

Method:

Crush the coriander seeds using a mortar and pestle to a fine powder and add to the chopped chilli. Add a couple of teaspoons of oil and salt to taste, and mix well. Spoon the mixture on top of your flatbread and toast, until the base has some crunch. Garnish with chopped coriander and serve.

Za’atar Flatbread

Ingredients:

  • 2 pita breads
  • 1 teaspoon za’atar spice mix
  • ¼ cup yoghurt
  • 7-8 olives
  • Olive oil

Method:

Mix the za’atar spice mix with some oil and brush on top of the pita bread. Toast on a pan until the bread turns crisp. Serve with yoghurt to dip in and olives.
