We’ve all appreciated the simplicity of a good ham and cheese toastie from time to time. The salty-sweetness of the ham juxtaposed by gooey, melting cheese is a pleasure we’ve all given into at some point, in our lives. Crostinis are a fancier, smaller version of open toasts that make for ideal canapes to serve guests at parties.
Any number of toppings on sliced baguette – ranging from smoked salmon and cream cheese, figs and gruyere and even mozzarella and tomatoes are pretty much the usual suspects. This quick and delicious brie and prosciutto crostini is a fine dine take on the classic ham and cheese sandwich but amps up the flavours by a considerable margin. These little bites are perfect to pass around to guests while they sip on their drinks and keep the chatter going during your year-end celebrations. The carbs and cheese are great to soak up the alcohol and is a beautiful interplay of textures ranging from crispy to gooey to chewy.

Ingredients:
- 8-10 prosciutto slices
- 2 whole French baguettes, sliced 2 inch thick
- 2 wheels brie cheese, sliced thin
- Butter
- 2 teaspoons chopped chives
- Honey to drizzle
Method:
- Generously butter the baguette slices and toast them on a low heat in a flat gridle until they start to turn brow. Flip them over and toast on the other side.
- In a separate pan, lay down the prosciutto slices and fry them without any additional fat until they begin to crisp. Once crisped, break them into threes and set aside.
- To assemble, place a piece or two of prosciutto on the baguette followed by the sliced brie and broil in the over for a minute or two, until the brie starts to melt. Plate them on a large serving platter and drizzle a few ribbons of honey on top. Garnish with chopped chives and serve warm.
