Mor Kali: Know How To Make This South Indian Delicacy

Ingredients

For The Base

  • 1 cup thick buttermilk (whisked)
  • ½ cup rice flour

 For the Seasoning

  • 8 teaspoons sesame seed oil (gingerly oil)
  • 1 teaspoon mustard seeds
  • ¾ teaspoon urad dal (split white)
  • 2 red chilies or mor milagai
  • A pinch of hing (asafoetida)
  • 1 green chilli, slit
  • A few curry leaves

Preparation Steps

  1. Assemble all the ingredients and set up your workspace first. Put the rice flour and the thick buttermilk in a mixing basin. Mix them with a whisk until the batter is smooth and lump-free. It should have a consistency that is both pourable and thick enough to maintain its shape. After mixing, let the batter sit for a bit while you get the seasoning ready.
  2. Then, heat the sesame seed oil in the pan over medium heat. Add the mustard seeds and allow them to crackle once heated. Then add the urad dal and let it get golden brown so that its nutty flavour can be released. Then, for a taste explosion, add the curry leaves, slit green chilli, and red chillies or mor milagai. At this point, you can add a pinch of hing to improve the aroma. Gently pour the prepared rice flour and buttermilk combination into the pan, letting the spice mix well with the batter.
  3. To get the desired texture, the batter must be cooked thoroughly while it is combined with the spice. To avoid lumps, cook the mixture over medium heat while stirring constantly. As it cooks, the batter will progressively thicken and modify consistency. Continue to stir until it separates from the pan's sides, indicating that it is ready. Usually, this procedure takes five to seven minutes. 
  4. Take the batter off the heat as soon as it becomes thick and cohesive. Pour the mixture onto a tray or plate that has been oiled. Using a spatula or the back of a spoon, quickly form it into a thick, round cake-like shape. To make sure everything is uniform, level the surface. Before cutting it into wedges or pieces, let it cool slightly. Warm mor kali is delicious, displaying its smooth, velvety texture and genuine flavours.

Serving And Enjoying
