This fantastic Mediterranean potato salad has it all if you're looking for a fresh take on the conventional dish. With soft yellow potatoes and vibrant, traditional Mediterranean tastes, there is plenty of texture. It's a potato salad that has been lightened up and is ideal for the hotter summer months. Moreover, it has fewer calories than most Mediterranean cuisine because the heavy cream is skipped. It also includes a lot of fresh, fragrant spices, olives, and soft, tender potatoes. The light lemon and mustard vinaigrette that mixes all of those delicious tastes is the finest part.

Here's how you can make this delicious dish at home:

Ingredients:

 2-3 green onions, thinly sliced

 ¼ cup chopped parsley

 ¼ cup chopped red onions

 ¼ cup chopped Kalamata olives

 1 tablespoon salt

 910 g of small potatoes

 ¼ cup chopped fresh cilantro

For the dressing:

 2 teaspoons Dijon mustard

 ⅓ cup fresh lemon juice

¼ cup extra virgin olive oil

 ¼ teaspoon black pepper

 ½ teaspoon salt

Method:

Put the potatoes in a big pot and add enough water to cover them. After adding salt, bring the water to a boil. Simmer the mixture for 15 to 20 minutes, or until the potatoes are fork-tender. Drain, then place somewhere to chill.

Cut the chilled potatoes into bite-sized pieces, then place them in a big salad dish.

Mix the lemon juice, olive oil, Dijon mustard, salt, and pepper to make the dressing. Pour over the potatoes, then incorporate by tossing. Gently blend the green onions, parsley, cilantro, onions, and olives after adding them.

Serve hot or chill for several hours before serving cold. Before serving, add a drizzle of olive oil if the potato salad seems dry.
