Masala Anda Bhurji Pav: Boasting A Touch Of Mumbai Style

Ingredients:

  • 4 no - Eggs 
  • ½ tsp - Salt 
  • 2 tbsp - Butter 
  • ½ cup - Chopped Onions 
  • 1 no - Chopped Green Chilli
  • ½ tsp - Chopped Ginger 
  • ½ tsp - Chopped Garlic (optional)
  • ½ tsp - Turmeric 
  • ½ tbsp - Pav Bhaji Masala 
  • ½ cup - Chopped Tomato
  • 1 tbsp - Chopped Coriander

For Masala Pav - 

  • 6 pcs- Pav
  • 2 tbsp - Butter 
  • A Generous Pinch of Pav Bhaji Masala 
  • A Handful Chopped Coriander

Method:

  • First of all, break the eggs into a bowl and whisk them well
  • Add some salt to it and whisk it again
  • Now take a pan and heat it on a medium flame (Keep the flame on medium throughout the cooking process)
  • Add some butter and melt it
  • After that, add the chopped onions, chopped green chilli, some chopped ginger and chopped garlic (optional)
  • Now quick stir it until it turns a little golden
  • Add some turmeric powder and Pav Bhaji masala and quick stir it
  • Now add chopped tomatoes and stir it
  • Add some salt and the eggs to the pan and keep stirring it
  • Once the masala Anda bhurji seems ready, add some chopped coriander and plate it to serve

Masala Pav -

  • Add some butter to the hot pan and keep the flame low
  • Place the pav pieces on the melted butter and slightly push them on the pan
  • Keep rotating it so that it will get evenly brown 
  • Turn the soft side up and sprinkle some pav bhaji masala and chopped coriander on it 
  • Again turn it and let the masala cook for less than a minute
  • The masala pav is ready to eat with masala anda bhurji
