Make This Absolutely Delicious Coriander and Lime Rice Burrito

Among all the Mexican dishes available in India, Burritos are our favorite. If you need a handheld and portable meal, look no further than a humble burrito for inspiration. Burrito is a simple tortilla (roti) stuffed with homemade refried beans, vegetables like bell peppers, mushrooms, fresh Pico De Gallo, creamy guacamole, and sour cream. Drooling, Are you? 

This Mexican dish has been Indianized in many ways but have you tried Coriander and Lime Rice Burrito? This is much of a burrito with an Indian touch. Believe me, once you have it, you are never going to any other sort. Coriander will add its leafy goodness to burritos and will prove that although a very basic ingredient, coriander can elevate the flavour of literally any dish. Let us see how it is made!

Ingredients 

  • Coriander leaves 
  • 1 cup rice 
  • 1 lemon 
  • 1 tsp salt  
  • 1 Avocado
  • ½ cup Refried beans 
  • 2 to 3 tsp Pico De Gallo (something similar to our desi Kachumber) 
  • 1 tsp Chipotle sauce and Sour cream (Can substitute it with chili sauce, curd, and ketchup) 
  • Some pickled sirka onion  

Method 

  • First, chop a generous amount of coriander  
  • Take a saucepan and add water 
  • Add soaked rice to the pan and cover 
  • Let it cook for 10 to 12 minutes 
  • After its done, add chopped coriander to the rice 
  • Squeeze a lemon and add salt 
  • Mix well and set aside 
  • Take a tortilla, add coriander rice in the middle 
  • Add refried beans 
  • Add Pico De Gallo 
  • Add Chipotle sauce 
  • Add sour cream 
  • Add some pickled sirka onion 
  • Add avocado
  • Wrap it with an aluminum file 
  • You can toast it or have it as it 
  • Cut from the middle and serve with the condiments of your choice 

Tip: For Pica De Gallo, add chopped tomato, onion, coriander, and chilies in a bowl. Squeeze a lemon and mix well. Your Pica De Gallo is ready! Enjoy
