Make Lunchtime Memorable With This Soya Keema Aloo Paratha Recipe

For more than two years, most of us have been confined to home. Working non-stop, hopping from one call to another, we often neglect our meal-time, despite working from the comfort of our own home. Isn’t that ironic. We feel depleted because even when we break for lunch, we have another pending task on our minds. Taking meals is absolutely crucial whether you are working in a remote setting or in traditional office spaces. And while we understand that making a filling lunch is a task in itself, but who said a wholesome lunch requires you to slog it out in the kitchen for hours? You can easily rustle up something satiating with a handful of ingredients too, in very little time, provided you are willing to experiment.

What Is Soya? Why Should You Include It In Your Diet?

Soya or soyabean, is a by-product of soy milk. This is often seen as a vegan substitute of paneer. While India is native to scores of vegetarians, the number of vegans has seen rampant growth only recently. Soyabean is also ideal for those trying to transition from a meat-based diet to a plant-based one, as its texture is reminiscent of meat, it is also an incredible source of protein. Soya bean is easily available in the markets as soya chunks, also locally known as ‘Nutri’, especially in northern parts of the country. These nuggets/chunks are often cooked in a tomato or yogurt-based gravy, but if you are really tight on time, we recommend you opt for soya keema. They are also readily available, or you can simply boil these nuggets and mash it using your hands. Minced soya, just like keema could be used to make various traditional items, albeit with a vegan twist. Take, for instance, this soya keema paratha.  

This sumptuous paratha, is made with a generous filling of both soya and aloo. It could serve as an excellent breakfast dish, while also doubling up and a loaded lunch item. Just serve wit with raita, pickle, chutney and some salad and you are good to go.  

The magic of this paratha, really lies in its filling which is made of soya mince, finely chopped onions, green chillies, mashed potatoes, red chilli powder, garam masala powder, amchur powder, mint leaves and salt. It has the right amount of spice and a tangy zest. The filling is so delicious that you can reserve some for later use, it also makes for an excellent sandwich filling.
