Ingredients

 2 tbsp butter

 450g ground chicken

 1/2 yellow onion, diced

 1/2 green bell pepper, diced

 1 packet of taco seasoning

 255g tomatoes

 225g uncooked spaghetti

 3 cups low-sodium chicken broth

 1 1/2 cups shredded cheese

 Cilantro, for serving

 Green onions, for serving

Method

1. Melt the butter in a big, deep skillet. Combine the ground chicken, onions, and bell peppers in a mixing bowl. Cook for 5 minutes, or until the ground chicken is browned. Remove any excess fat from the ground chicken.

2. To the skillet, add the taco seasoning, tomatoes, spaghetti, and chicken broth. Bring the ingredients to a boil. Reduce the heat to low, cover, and cook for 15 minutes, or until the spaghetti is al dente. (Al dente is Italian meaning "to the tooth," and it is the only way to cook pasta perfectly. "To the tooth," says your noodle should have a small bite to it. The spaghetti should not be firm, but should have a slight resistance while biting into it).

3. Remove the skillet from the heat, sprinkle with the cheese, and cover until the cheese melts. Garnish with cilantro and green onions to taste. Serve and have fun.
