Ingredients

  • 2 cups poha (flattened rice)
  • 1 onion, finely chopped
  • 1 potato, diced
  • ¼ cup peanuts
  • 2 green chillies, chopped
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • ¼ tsp turmeric powder
  • Salt to taste
  • 1 tbsp oil
  • Fresh coriander leaves, chopped
  • Grated coconut
  • Lemon juice
  • Sev

Method:

  • Rinse the poha in a colander and soak it in water for 10 minutes. Drain the water and set the poha aside.
  • Heat the oil in a pan and add the mustard seeds and cumin seeds. When the seeds start to splutter, add the chopped onions and sauté until they turn translucent.
  • Add the diced potatoes, green chillies, and peanuts to the pan and sauté for a few minutes.
  • Add the turmeric powder and salt to the pan and mix well.
  • Add the soaked poha to the pan and mix well. Cook for 2-3 minutes, stirring occasionally.
  • Garnish with chopped coriander leaves, grated coconut, crunchy sev and a dash of lemon juice.
