Ingredients

    1 short rib

    2 tablespoon vegetable oil

    2 cups beef stock

    2 cloves garlic

    2 sprigs of thyme

    ½ stick butter

    ¼ cup flour

    1 cup milk

    ½ teaspoon ground black pepper

    1 cup gruyere, grated

    ½ Parmesan, grated, plus a handful to top

    3 cups cavatappi pasta, cooked al dente

    ½ cup fresh breadcrumbs

    Small handful parsley

    Small handful thyme

    ½ tablespoon salt

    1 tablespoon olive oil

    Black truffle, to serve

Method

    Preheat the oven to 250 degrees.

    Heat oil in a pan and cook the short ribs till brown.

    Transfer to an oven dish and add stock, thyme and garlic. Tightly seal the dish with aluminium foil and cook for 4 hours. Then remove the foil in the last 20 minutes.

    Preheat the oven to broil. Grease another baking dish.

    Melt butter in a pan. Add flour and cook for one minute while continuously stirring.

    Gradually add the milk and stir to avoid lumps. Add a good amount of black pepper, grated Gruyere and Parmesan. Cook till the cheese is melted then turn off the heat.

    Add cooked pasta. Remove the meat from the short rib before adding it to the pan. Mix it all together.

    Put breadcrumbs, parsley, thyme, salt and olive oil into a food processor. Pulse a few times till everything is mixed thoroughly.

    Transfer the macaroni to the greased baking and sprinkle parmesan and breadcrumbs mixture on the top.

    Grill for 5 to 10 minutes until it's golden brown. Leave to rest for a few minutes.

    Shave truffle on the top before serving.
