Mac and cheese's origins may very well be traced to Italy, which is known for its exquisite cuisine. Food historians consider the de lasanis recipe found in the Italian cookbook "Liber de Coquina," or "Book of Cooking," from the 13th century to be the origin of macaroni and cheese. According to de lasanis sheet pasta should be 2-inch squares, cooked in water and tossed with grated cheese, preferably Parmesan. Macaroni and cheese gained popularity in Europe after that. At New England church suppers in colonial America, casseroles like modern-day mac and cheese were served. These meals likely came from recipes passed down from English ancestors. Before the Industrial Revolution, when it became simpler to produce pasta, the meal was largely a treat for the upper classes. So, everyone has their own favourite variation of the meal even though no cook can claim to have invented the traditional macaroni and cheese recipe.
