As per legends, the name "Galouti" is derived from the Urdu word "Galawat," which means "melt in the mouth." These scrumptious and juicy kebabs are traditionally served with Lucknawi parathas, which are flaky and layered flatbreads. History Of Galouti Kebabs

If some food legends are to be believed, galouti kebabs originated during the rule of Nawab Asaf-ud-Daula in the late 18th century in Lucknow, the then capital of the Awadh region. The Nawabs of Awadh were known for their extravagant and refined culinary tastes, and they patronized the development of many intricate dishes and kebabs were his favourite. The Nawab had appointed special Khansamas to make new kebab varieties while experimenting with exotic flavours like red ginseng, rose, juniper berries and many more.

When the Nawab grew old and subsequently lost his teeth, it became hard for him to chew but he didn’t let this issue come between his love for kebabs. It was when the Nawab ordered the royal chefs to make the softest kebabs that would not require any chewing. He paid a special emphasis towards not compromising on the flavours. After several attempts, the chefs created galouti kebabs that would melt in the Nawab’s mouth without even moving a single muscle. 

You know what? These kebabs became softer and softer and slowly transformed into the popular “Tunday kebabs.” This softer version was created by Haji Murad Ali who only had one working arm. It wouldn’t be wrong to say that the legacy of Galouti kebabs lives on not only in Lucknow but also throughout the world. They have become a symbol of Awadhi cuisine and are enjoyed by people who appreciate the rich culinary heritage of India.
