The Sambucus or elder tree bears small blackberries known as elderberries that have a great taste and are known to have many health benefits. These edible berries are dark purple, nearly black, and ripen in late summer or early autumn. A mixture of cooked or fresh elderberries, sugar, and a thickening agent such as tapioca starch or cornflour is usually encased in a crisp pie crust. Together, they produce a delicious filling that goes well with the buttery shell. Preparing or buying a pie crust is the first step in preparing elderberry pie. In a saucepan, mix sugar and cornflour with stemmed elderberries to make the filling. Pour the mixture into the prepared crust until it thickens after cooking.

Elderberry Jam
Another delicious way to eat these berries is in elderberry jam. This spread can be used specifically as a filling to pastry products, spread on the toast, or added to yoghurt. A tasty and aromatic jam is produced by combining sugar with the elderberries' inherent sweetness. Simmering fresh or frozen elderberries with sugar and lemon juice until the mixture thickens is how elderberry jam is made. To preserve the jam for later use, pour it into sterile jars and make sure they are firmly sealed. A unique and refreshing dessert that maximises the flavour of this berry is elderberry ice cream. Making an elderberry base, which is a purée made by boiling elderberries with sugar and lemon juice, is usually the first step in making elderberry ice cream. Cooked elderberries are combined with cream, milk, sugar, and vanilla essence, and then churned in an ice cream maker to create elderberry ice cream. The end product is an ice cream that is refreshing mainly during hot weather. A range of toppings, including fresh berries, almonds, or small amount of elderberry syrup for extra sweetness, go well with elderberry ice cream.

Elderberry tea has healing benefits aside from its delicious taste. Enjoyed hot or cold, this medicinal tea is a comforting beverage in the winter months. It is made by steeping dried elderberries in boiling water with other herbs, such as mint or chamomile, for flavour. Before straining out the berries, let it steep for a few minutes. If desired, sweeten with honey to create a soothing drink that's ideal for relaxing.
