Like Salads? Replicate These Recipes Shared By Chef Rahul Istwal

Salads are the best sources of fibre, protein, and essential nutrients. If you are picturing the standard ones where vegetables are sliced and served with just a sprinkle of salt and a drizzle of lemon juice, it’s not that. A power-packed has all the elements - vegetables, protein, fat, and good carbohydrates.

It is a blend of all the ingredients tossed in tangy, spicy, sweet, and salty dressings. Rahul Istwal, Executive Chef at Angsana Oasis Spa & Resort, Bengaluru, shared two refreshing salad recipes with Slurrp. Replicate these at home and enjoy a wholesome meal or serve as a side dish in the middle of a festive spread.

Grilled Vegetable Salad

Speaking about the dish, Chef Rahul said, "It is a smoky, refreshing salad that highlights the natural sweetness of grilled zucchini, bell peppers, and cherry tomatoes. The combination of crumbled feta and balsamic vinegar adds a perfect balance of creaminess and tang, making it a vibrant dish for the warmer days ahead."

Ingredients

  • 1 Zucchini
  • 1 Yellow Squash
  • 1 Red Bell Pepper
  • 1 Cup Cherry Tomatoes
  • 1/2 Red Onion
  • 2 tbsp Olive Oil
  • 1 tsp Salt & Black Pepper
  • 1 tsp Garlic Powder
  • 1/2 tsp Chili Flakes
  • 1/4 cup Crumbled Feta Cheese
  • 2 tbsp Balsamic Vinegar
  • Fresh Basil Leaves

Method

  • Preheat the grill to medium heat.
  • Toss zucchini, squash, bell pepper, and onion with olive oil, salt, pepper, and garlic powder.
  • Grill for 3-5 minutes per side until slightly charred and tender.
  • Transfer to a salad bowl, add cherry tomatoes, and crumbled feta.
  • Drizzle with balsamic vinegar, toss gently, and garnish with basil.
  • Serve warm or at room temperature.

Chilled Cucumber & Avocado Soup

"It is a creamy and cooling soup that combines the refreshing taste of cucumber with the rich texture of avocado. Light, hydrating, and effortlessly elegant, this dish is perfect as the days grow warmer," added Chef Rahul.

Ingredients

  • 1 Large Cucumber
  • 1 Ripe Avocado
  • 1 cup Plain Yogurt
  • 1 Garlic Clove
  • 1 tbsp Lemon Juice
  • 1/2 Salt
  • 1/4 tsp Black Pepper
  • 1/2 Cup Water
  • Fresh Dill or Mint

Method

  • Blend cucumber, avocado, yoghurt, garlic, lemon juice, salt, and pepper until smooth. 
  • Add water gradually to adjust consistency.
  • Chill for 30 minutes before serving.
  • Garnish with fresh dill or mint and serve cold.
