Unarguably, most of our favourite childhood memories are related to ‘Naani Ka Ghar’ during summer vacations. Personally speaking, I can savour mangoes in any form, at any time of the day. From mango smoothie in the morning to mango chutney in the afternoon with lunch and a slice of it after dinner, the fruit is inevitable in every meal during summer. Keeping all the other dishes aside, let’s talk about the tantalizing and delicious mango chutney. Made with raw mangoes, mango chutney is easy to make and is found in most Indian homes during summers. The tangy and spicy condiment is fondly savoured in most courses. Although making it seems quite easy, getting the authentic flavours can be a hard nut to crack. So, here are some easy tips that you need to keep in mind while making mango chutney. 

1. Chop the raw mangoes beforehand before pulsing or blending them for the perfect texture. 

2. If the mango is too sour, add a teaspoon of jaggery to the mixture. Not only getting over the sourness but this will also help in instilling a sweet flavour note in your chutney. 

3. You are free to play with different spices. Try adding spices like methi, cumin seeds, fennel seeds and kalonji to make your chutney more flavourful. 

4. If using chillies, use red ones. This will not only add a unique flavour note but also add a red hue to the chutney making it visually appealing. 

5. Make sure you either dry roast or cook the spices (in case of aam ki launji) to eliminate the raw taste and smell.
