Among a host of festive delicacies, lapsi is a traditional Gujarati sweet dish that is prepared on every festival. Lapsi is a wheat-based Indian dessert that is prepared using broken wheat, that is melded with rich desi ghee, jaggery, cardamom powder and kesar, to enhance the flavours. Lapsi can be directly prepared in a heated pan or a pressure cooker.

1. Always make sure to continuously keep stirring  

Whether you are preparing lapsi in a pan or using a pressure cooker, it's always necessary to keep stirring the mixture until it's cooked properly. Stirring helps in keeping it away from becoming gooey or for the mixture to stick up with each other. Continuously stirring is something you can’t miss out on while cooking even for five minutes.  

2. Good quality broken wheat is the key to a perfect lapsi  

Yes, making sure to use good quality ingredients is true while preparing any dish but in case of preparing lapsi it's quite essential. This is because lapsi itself is a broken wheat based dish so if you use old and inferior quality broken wheat, there are high chances that this sweet dish may taste bland and turn soggy quickly.  

3. Always replace Sugar with Jaggery

Lapsi is typically prepared with jaggery instead of sugar. If you want to indulge yourself in the authentic taste, replace sugar with half a cup of jaggery. It brings out the unique taste and deliciousness this sweet dish is known for.  

4. Add dollops of ghee in the beginning

 Pouring some tablespoons of ghee in the very beginning helps for the ingredients to mix with each other and keeps the mixture away from drying out.
