Sabudana, also known as tapioca pearls, sago, sabu and Javvarisi, is quite famous in India. Especially during various festivities like Navratri, etc due to the ingredient being fasting-friendly. Sabudana looks like small white droplets and it is made from the milk extracted from the tapioca roots. 

The versatility of this ingredient makes it a popular kitchen staple across the country. A huge variety of dishes can be prepared with the help of Sabudana. From sweet desserts like kheer or payasam to snack items like tikki and fritter to even main course like khichdi. You can survive a whole day on these tiny white pearls basically.

1. Sabudana Tikki

Sabudana Tikki is a popular Indian snack prepared with tapioca pearls. They are patty-like cakes that are mixed with boiled, mashed potatoes, ground peanuts, and a variety of spices before they are shallow fried in oil until golden brown. On the outside, there is a nice crunch, and on the inside is a soft flavour. Most of the tikki or fried foods we enjoy are made of all purpose flour, which is not a good option to consume on a daily basis.  However, sabudana tikki is a vegan and gluten-free snack, it is suitable for snacking any time and even for fasting days.

2. Sabudana Khichdi

The ubiquitous Indian food called Sabudana Khichdi consists of tapioca pearls. Delicious and nutritious healthy dish which can be taken during holy events or any normal day. The dish is prepared by immersing sabudana in the water before further cooking it with peanuts, potatoes, curry leaves and other spices for flavour. Sabudana Chivda is an Indian snack that tastes great with its crispness derived from tapioca pearls. To make sabudana chivda one has to fry the sabudana until puffy and crispy. Then it is mixed with roasted cashew, and peanuts and flavoured with masala. Lastly, you need to temper the whole mixture with green chillies and hot oil.
