Ingredients 

* Mustard oil

* Carrots

* Green chillies

* Hing

* Water

* Salt

* Fenugreek seeds

* Turmeric

* Cumin seeds

* Red chilli powder

* Coriander powder

* Garam Masala

* Black salt

Recipe

* Take some carrots and cut all of these into medium, long sticks and remove the peel.

* Now in a bowl, take some hing and water and keep this mixture aside for some time.

* Now take a pan and heat some mustard oil, methi dana, jeera, chopped carrots, slit green chilli, hing water, salt, red chilli powder and turmeric

* Mix all of this very well and cover everything with a lid. After some time you will see that your carrots have become soft because of the vinegar. 

* If you think your carrots have become soft, then you can add some tamarind, water, black salt, coriander powder, and garam masala to the mixture.

* Now cover the mixture with a lid again for 4 to 5 minutes. Your khatti Gajar is ready. You can eat this with whatever you like, for example, rice, Paratha, roti, and even khichadi.
