Kashmiri Cuisine: 3 Traditional Delicacies That Taste Divine

Who wouldn't love to admire the beautiful Valley of Kashmir! I guess no one would miss a chance to visit ‘paradise on earth’. But have you ever tasted the cuisine of Kashmir? It’s equally rich and beautiful. We have brought you the recipes of some divine delicacies from the Valley that you can easily make at home. While we all know how delicious Kashmiri wazwan is, we have three main dishes today to begin the culinary expedition with. So let's dig into these recipes.

Rogan Josh

Ingredients:

  1. Kashmiri chilli powder - 1/2 tsp
  2. Cardamom - 1/2 tsp
  3. Ginger paste - 1 tsp
  4. Asafoetida - 1/2 tsp
  5. Garlic paste - 1 tsp
  6. Onion - 2 chopped
  7. Meat - 500 grams
  8. Salt - as per taste
  9. Dry ginger - 1 tsp
  10. Turmeric - 2 tsp
  11. Fennel - 1/2 tsp
  12. Curd - 1 cup
  13. Bay leaf - 3
  14. Oil - 1 cup

Method:

  1. First, clean the meat thoroughly and keep it aside
  2. After this, boil the meat, turmeric, garlic-ginger paste, cardamom and bay leaves with water in a pan.
  3. Heat oil in a pan, add onion, fennel, dry ginger, chilli powder and fry them. Now, add the water and curd in it.
  4. After cooking for some time, put the meat in it; turn off the stove after about 10 to 12 minutes
  5. Delicious Kashmiri rogan josh is ready to serve.

Haak

Ingredients:

  1. Cardamom powder - 1/2 tsp
  2. Salt - according to taste
  3. Garlic paste - 1/2 tsp
  4. Asafoetida - 1/2 tsp
  5. Whole red chilli - 3
  6. Mustard oil - 2 tsp
  7. Saunth - 1/2 tsp
  8. Fennel - 1/2 tsp
  9. Haak - 1 kg

Method:

  1. First, fry mustard seeds in a pan for some time
  2. After frying, add garlic, asafoetida, red chilli, cardamom powder, and cook after frying.
  3. Then, add fennel, salt, haak and mix them well.
  4. Let it cook for six minutes and turn off the stove
  5. Tasty haak is ready to serve.

Kashmiri Tehri

Ingredients:

  1. Cardamom powder - 1/2 tsp
  2. Turmeric powder - 1/2 tsp
  3. Coriander leaves - 1/2 tsp
  4. Salt - according to taste
  5. Tomato - 1 chopped
  6. Basmati rice - 2 cups
  7. Onion - 2 chopped
  8. Cumin - 1/2 tsp
  9. Oil - 1/2 tsp

Method:

  1. First, soak basmati rice in water and keep it aside
  2. Heat oil, add rice, cardamom powder, and turmeric, and cook it well in a pan
  3. Add oil, onion, tomato, cumin and salt to another pan and cook until golden
  4. Now, put the cooked rice on a plate, garnish with fried onions and coriander leaves on top
  5. Kashmiri tehri is ready to be served
